In Which She Enters Blogdom
















OK, here goes:
I am not good with computers. Plain and simple. But the thought of blogging came to me yesterday when I was working outside. I was really productive, picking berries and veggies, weeding, taking pictures of our pretty garden. I was thinking that I wished I had a record of days like that, of what I accomplished, and what I was thinking, and a way to keep pictures of how things looked. And I realized that such a thing existed! That, in fact, I have toyed with the idea of doing it before but have been intimidated. A Blog! Lil' ole me, blogging, who'd have thought?
I've always thought of blogs as kind of like those letters you send with Christmas Cards. I love reading other people's, but I am never sure why anyone would want to read mine. The truth is, though, that as much as I crave approval and adoration, even if no one ever reads this, it's a good diary for me. So on days when I feel like I will never accomplish enough, I can return to these industrious days and say see, self? You're not so bad. So what did I do this weekend? Picked and froze 2 gallons of blueberries and took a few to my neighbor. Picked and canned 5 (just the beginning) quarts of green beans, picked zuchini and baked and froze zuchini bread and made a new recipe for dinner:
Egg and Corn Quesadilla
1 medium onion, chopped
1 medium green pepper, chopped


1 garlic clove, minced


2 tbsp olive oil


3 cups fresh or frozen corn


12 teasp dried cilantro flakes(I used a handful of fresh cilantro, chopped up


1/2 tsp salt


1/4 tsp pepper


4 eggs, beaten (I used 6 or 7 because we have lots of eggs filling the fridge)


4 large flour tortillas


1/2 cup salsa


1 cup sour cream


1 cup shredded cheddar cheese


1 cup shredded mozzarello cheese


**In a skillet, saute onion, green pepper and garlic in oil until tender. Add the corn, chives, cilantro, salt and pepper. Cook until heated through , about 3 minutes. Stir in eggs; cook until completely set, stirring occasionally. Remove from heat


**Place one tortilla on a lightly greased baking sheet or pizza pan, top with a third of the corn mixtures, salsa and sour cream. Sprinkle with a fourth of the cheeses. Repeat layers twice. Top with the remaining tortilla and cheeses


**Bake at 350 for 10 minutes of until the cheese is melted. Cut into wedges.Serve with salsa and sour cream if desired-i also served with guacamole. from taste of Home Prize Winning Recipes 2008


It was a success, more filling than you might imagine and while there is no meat it feels very substantial. I served watermelon cut up and breaded zuchini rounds fried in olive oil. The dinner was a hit


Unfortunately after dinner, I knew that I was going to have to go to bed because I had work today. It depressed me incredibly. I always get down after having a nice weekend then having to go back to work. But I did it. Work ended a little early so I went by the grocery store then home where Jeff tried to help me work on my golf swing. I am very slowly making strides. Someday
